    Good job, Chris!! Great choice with the pork belly. Skirt steak is a poor choice for this; pork belly all the way.

                            Guy Fieri's OWN recipe doesn't call the cheese sauce "queso". He calls it "Super Melty Cheese (SMC)" because of all the crap in it. Crap that you'll never find in other actual professional chef's cooking of queso.

                              Haha wow. Only ever seen Chris as a side on Claire's show but he has a real Alton Brown energy about him. I love it. Chris with a cooking show that doesn't play up some outside angle would be amazing. The chemist angle on cooking need to be mainstream.

                                    Pretty sure you wouldn't have a CLUE considering the pieces were minuscule and broken down in the marinade saturated in garlic, lime and salt then further decomposed with layers of wet crema, queso and pico. AND had the same texture AND pork belly is a common ingredient in other Mexican foods including tacos. Now WTF does "super small and palate powers" mean? That's not even a sentence.

                                                            Hilarious lack of common sense that you think Americans "need to" eat, cook or get used to Mexican foods and elements. BTW you're not even correct. Neither is Rick. Even GUY FIERI doesn't call it "queso" in his OWN recipe. He calls it: " Super Melty Cheese (SMC). Neither Aaron Sanchez or Rick Bayless, for example ,have ANY of those "spicy elements" in their quesos. And Chris's flavorings are closer to THEIRS than goofball Guy Fieri. And certainly NOT heavy cream. OR the other stuff like jalapeno JUICE FFS. But that's okay - you're probably used to the gourmet Velveeta-and-Ro-Tel dipping sauce.

                                                                                      As a person who is dealing with emulsions a lot, this queso situation triggered me slightly... :D oh man, glad the blender worked.
                                                                                      Oh and by the way, a working water-fat emulsioin does not normally break without a trigger.
